The fresh cut meat gets immediately contaminated with microorganisms derived from globes, hands, implements used to cut the meat, hides and hair, intestines of the animals and the air of the slaughter house. Each new surface of meat, resulting from a new cut, adds more microorganisms to the exposed tissue.
The more common microorganisms occurring on meat include both bacteria and molds. The raw meat and meat products often contain agents of Trichinella and pork tapeworm and beef tapeworm.

Trichinosis is a disease caused by a roundworm species known as Trichinella. These parasitic worms are found in animals that eat meat, including pigs, wild boars, and bears. Humans can get trichinosis by eating raw or undercooked meat of animals infected with Trichinella larvae. Trichinosis symptoms that may occur while the larvae are in your intestines include: diarrhea, abdominal cramps, fatigue or low energy, nausea, vomiting.

Taeniasis is an infection caused by the tapeworm, which is a type of parasite. Parasites are small organisms that attach themselves to other living things in order to survive. The living things the parasites attach to are called hosts.
Parasites can be found in contaminated food and water. If you consume contaminated food or drinks, you may contract a parasite that can live and sometimes grow and reproduce inside of your body. Taeniasis is an intestinal tapeworm infection caused by eating contaminated beef or pork.

You can develop taeniasis by eating raw or undercooked beef or pork. Contaminated food can contain tapeworm eggs, or larvae, that grow in your intestines when eaten.

In some cases, serious complications from the infection can occur. Tapeworms may block your intestines. This may require surgery to correct. In some cases, the tapeworm may travel to other parts of your body such as the heart, eye, or brain. This condition is called cysticercosis. It can cause other health problems like seizures or infections in the nervous system.

Case of practice:

The patient of 30 years came for diagnostics with a tumor in the head about 5 centimeters; during the testing a pork tapeworm has been found.

Listeriosis is a food-borne infection caused by Listeria bacteria. The majority of people who become infected might barely notice the illness. However, those at risk can be severely affected, and mortality rates are relatively high. Listeriosis is caused by Listeria, a type of bacteria that is commonly found in water, soil, and feces. Humans are infected when they consume foods that harbor the bacteria. The most common foods to cause listeriosis outbreaks are deli meats and unpasteurized dairy products.

Symptoms may include fever, headache, tiredness, aches and pains. Less common symptoms are diarrhoea, nausea and abdominal cramps. Symptoms may progress to more serious forms of the illness, such as meningitis and septicaemia.
